Slow Cooker Smothered Hamburger Steak

And this is for Sunday!


1- can cream of mushroom soup
1- can of water
1- packet French onion soup mix
1- onion, cut up
4-6 hamburger or cube steaks (I'm using cube steaks)


In Crock-pot, mix soup and water, whisk well, add French onion soup, mix well with soup. Turn setting to low. Lightly Brown Hamburger steaks in skillet, add to crock-pot and cover with soup mix. Cook for 3-4 hrs. Slice up an onion and place over the steaks & cook for another 3-4 hrs on low. Gravy is yummy over mashed potatoes!

*****UPDATE*****
This didn't turn out as well for me as I had hoped.  Jeffrey and the kids liked it ok, but the texture of the cubed steaks was weird for me.  I might try it again with regular hamburger.

White Chicken Chili

This is for Saturday.  I'm really excited about this recipe because it's something I'd probably never try before.  This really doesn't have to be prepared in the slow cooker.  My plan is to cook my chicken in the slow cooker so that it will be really tender.  Also, this is NOT a recipe for the kiddos!


Ingredients
1 32-ounce box chicken stock
3 cans white beans, left un-drained  (I'm doing w/o beans because I don't like them!)
5 cups cooked chicken (rotisserie or boiled)
1 16-ounce jar salsa
1 8-ounce block pepper jack cheese, grated
2 teaspoon ground cumin
2 cloves garlic, minced
Black or white pepper to taste
1/2 cup finely crushed corn chips (optional, if you like your chili thicker)
Sour cream, for garnish

Preparation
Place all ingredients except the corn chips in a crockpot. Cook on high until the cheese is melted.
Chili may also be cooked on the stovetop over medium-high heat until cheese is melted.
When the chili is ready, add the crushed corn chips, if using, and simmer for 10 minutes to thicken. Garnish with more chips, cheese and/or sour cream and serve. 



*****UPDATE*****
This got RAVE reviews from my family.  My grandma kept saying how delicious it was.  I'd like to make it again and use a medium or even hot salsa to give it a little more kick.  I definitely recommend using the crushed fritos.

Chocolate Crock Cake Recipe

I'm thinking I'm going to try this:

• 1 package chocolate cake mix
• 8 ounces sour cream
• 1 cup chocolate chips
• 1 cup water
• 4 eggs
• 3/4 cup vegetable oil
• 1 package instant chocolate pudding

What To Do
1. Spray interior of crockpot with a liberal amount of non-stick cooking spray.

2. Mix all ingredients together in a bowl, then pour into crockpot.

3. Cook for 6-8 hours on low or, set to high and cook 3-4 hours.


*****UPDATE******

This is DELICIOUS!  Make sure you do not over cook.  The outer edges of mine were a little too well done, but the middle was to die for!  I think I cooked mine on low for 5-6 hours.

Creamy Chicken & Potatoes

Tonight's supper:

4 boneless, skinless chicken breast halves
2 tsp poultry seasoning
8-10 small new (red) potatoes w/ peels
1 can cream of chicken soup
8 oz sour cream

Sprinkle chicken w/ poultry seasoning and place in sprayed slow cooker. Arrange potatoes around chicken.
Combine soup, sour cream, and a good amount of pepper in bowl. Spoon over chicken. Cover and cook on low for 4-6 hours.
Serves 4

****Update*****
I would put the potatoes on the bottom. My kids ate it up!

Slow Cooker Chicken Stroganoff

Today's CrockPot Dinner:

Ingredients
  • 4 skinless, boneless chicken breast halves - cubed
  • 1/8 cup margarine
  • 1 (.7 ounce) package dry Italian-style salad dressing mix
  • 1 (8 ounce) package cream cheese
  • 1 (10.75 ounce) can condensed cream of chicken soup

Directions

  1. Put chicken, margarine and dressing mix in slow cooker; mix together and cook on low for 5 to 6 hours.
  2. Add cream cheese and soup, mix together and cook on high for another 1/2 hour or until heated through and warm. 

 I'm serving this over egg noodles.

Slow Cooker Cheesy Potato Soup

I'm posting this today, in case I don't get on the computer tomorrow.  Since the weather is supposed to be a bit cooler, this sounded yummy!

1 bag (32 oz) frozen southern-style diced hash brown potatoes, thawed
 1/2 cup frozen chopped onion (from 12-oz bag), thawed
 1 medium stalk celery, diced (1/2 cup)
 1 carton (32-oz) chicken broth
 1 cup water
 3 tablespoons Gold Medal® all-purpose flour
 1 cup milk
 1 bag (8 oz) shredded American-Cheddar cheese blend (2 cups)
 1/4 cup real bacon pieces (from 2.8-oz package)
 4 medium green onions, sliced (1/4 cup)

Directions
In 3- to 4-quart slow cooker, mix potatoes, onion, celery, broth and water.
Cover; cook on Low heat setting 6 to 8 hours.
In small bowl, mix flour into milk; stir into potato mixture. Increase heat setting to High. Cover; cook 20 to 30 minutes or until mixture thickens. Stir in cheese until melted. Garnish individual servings with bacon and green onions. Sprinkle with pepper if desired.

CrockPot Beef Stroganoff

I'm super excited about this one because my house already smells heavenly!

1 1/4 pound cubed beef stew meat
2 can condensed cream of mushroom soup (98% fat free for a healthier choice)
1 chopped onion
2 Tbsp Worcestershire Sauce
1/4 c. beef broth (or a little more if you want saucy, you could also use water or red wine)
dash of garlic salt
8 oz cream cheese (cut up)
Egg noodles

In slow cooker, combine uncooked meat and all ingredients EXCEPT cream cheese and noodles.

Cook on low setting for 8 hrs or high for about 5 hrs. Approx. 15-20 min before serving, add the cream cheese; stir occasionally until melted. Approx. 10 minutes before serving, add uncooked noodles, push down in sauce to get lightly coated; replace lid, but stir occasionally until noodles are soft & ready to eat.

*A small can of mushrooms or fresh mushrooms is a good addition.

You can serve with sour cream or not if you wish.

Misti's Chocolate Chippers

Ok, this is not a crockpot or healthy recipe, but they are seriously the best choco chip cookies I've ever had....and I've had LOTS!


1 c crisco
1 c sugar
1/2 c brown sugar
2 eggs
2 tsp vanilla
3 c flour  (I reduce this to about 2 1/4 c)
1 1/2 tsp salt
2 tsp bk soda
2 cups semi-sweet ch chips
1 1/2 cups nuts

Cream crisco, sugars, eggs and vanilla until light and fluffy. Put dry ingedients in bowl add to the creamed mixture mix well. Add ch chips and nuts. Bake @ 375 for 10 minutes. DO NOT overbake! When done remove to sheets of foil until cooled. Makes 4 dozen.

I bake mine around 8 1/2 minutes.  They are soooooo yummy!

CrockPot-Bacon Ranch Chicken


4 boneless skinless chicken breasts
2 tbsp real bacon bits
1tsp minced garlic
1pkg ranch dressing mix
1 can cream of chicken soup
1 cup sour cream
egg noodles, cooked (add these at the end)

Combine bacon, garlic, ranch dressing mix, soup, and sour cream; mix well. Pour over chicken in the crock pot. Cook on high 3-4 hours. I then shred the chicken and put back in the pot and add the egg noodles; mix together

This was super duper yummy.  My husband stated he would be craving this!

Crockpot Cheesy Chicken Spaghetti

Ingredients:
16 oz. dry spaghetti, cooked - (I used dry and it worked great!)
1 lb. Velveeta Light cheese
12.5 oz. can chicken breast, drained and flaked - ( I used 2-3 frozen chicken breasts)
10 3/4 oz. can 98% fat free cream of mushroom soup, undiluted
10 3/4 oz. can 98% fat free cream of chicken soup, undiluted
10 oz. can diced tomatoes and green chilies (Rotel)
4 oz. can mushroom stems and pieces, drained -(I didn't add)
1/2 cup water
1 small onion, diced
1 medium green pepper, diced
salt & pepper, to taste

Directions:Spray slow cooker with non-stick cooking spray.
Combine all ingredients in slow cooker and stir to mix well.
Cook on LOW for 2-3 hours. Stir again just before serving.


This was very good.  If you use dry spaghetti, 2-3 hours may not be long enough, so make sure your spaghetti is done!

CrockPot-Chicken & Dumplings


4-5 boneless chicken breast
2 T melted butter
2 cans cream of chicken
1 can of water
pepper to taste

cook all together on low for 8-10 hrs.
Last 45 mins. turn to high and add 1 12 oz. can of canned biscuits that have been quartered. stir. and enjoy!!


This one is in my crock right now and I'm really hoping it turns out!  I'll let you know!

CrockPot-Creamy Beef and Pasta

2 cans cream of mushroom soup
2 cups (8 oz) shredded cheddar cheese
2 cups uncooked small pasta
2 cups milk
1 pound ground beef, cooked and drained
1/2 teaspoon onion powder
1/2 teaspoon salt
1/8 teaspoon pepper

Combine all ingredients in crock pot. Cover and cook on low for 3 to 4 hours, or until pasta is tender. Yields 4 to 6 servings.
 
This one is really good.  My husband and kids all liked it.

Well I'm sure both of you reading this (Daisy & Crazy_Squaw) know pretty much all there is to know about me.  But I'm going to blog anyway!  Around 7 of the 13 years that I've been married, I've tried to get pregnant.  #FAIL.  So now I'm a foster mom.  I have 4 kids UNDER the age of 4.  They are all full blood siblings and yes that means their bio mom spends more time pregnant than not. 

So, I've been feeding my precious babies the same things I ate.  Chicken nuggets, french fries, tator tots, steak fingers, oh here's some green beans, etc.  I know why most kids are raised on this.  It's EASY, and I'm all about easy!  But I've also struggled with my weight for my entire adulthood.  I eat when I'm sad, happy, lonely, dopey, sneezy, sleepy, etc.  So I'm now making an effort to prepare more healthful, non fast food type foods.  I've recently discovered a website called http://crockpotgirls.com/ and they ROCK!  I've always been a fan of my crockpot.  I'd throw some frozen chicken in and top it with salsa and 6-8 hours later....YUM!  But now I've got these 4 kids and 3 of them want to eat at 6pm on the dot, but my husband doesn't get home from work until 6:30 or later.  Problem solved!  I throw ingredients into the crock and my kids eat on time and my husband and I eat whenever we get a dang minute!  It's been working out great so far!  Also, if you've never tried crock pot liners, they are the best invention!  There's no mess, just a quick wash of the crock to get rid of the last meal's odor! 

So to start off my very first blog, I'll be posting some of the recipes that I've found.  I hope you enjoy!
